My Montserrat: Welcome to The White Wall gentlemen, which part of the Island are you from? Smudge: Kinsale/Aymers Ghaut Jake: Ryners Village My Montserrat: How long have you guys been grilling as a team? Jake: We've been grilling as a team since the summer of last year. However, we go as far back as 1983 when we use to make Conchs Water after basketball practice by Amelia and Professor in Wapping. My Montserrat: So who is the official grill master? Smudge: That would be Jake. My Montserrat: So Jake is cooking something that you enjoy doing? Jake: Yes it's a passion of mine, I like to try different things. I enjoy food from various cultures, Thai for example. I also like to watch the food channel for inspiration. My Montserrat: So Smudge, what is your role? Smudge: I organize the events and get the word out. My Montserrat: So you're like a promoter then? Smudge: Exactly. My Montserrat: Your grill sessions on Montserrat was a big hit last year, what motivated you to go down and do that. Jake: We went down and were slightly disappointed at the fact that we couldn't find any establishment that offered any type of fish that wasn't fried. We saw this was an opportunity to fill a gap and offer something really good that wasn't readily available. My Montserrat: Was it a positive experience? Smudge: Yes, people responded positively, it was a great experience all around and quite satisfying. My Montserrat: So tell us about the famous Smudge & Jake's "fish", what makes it so desirable? Jake: Well, that's a trade secret but we incorporate a lot of natural seasonings and vegetables. My goal was really to just challenge myself to make something really nice and different from the other other roast fish I had sampled around the tri-state area. My Montserrat: The summer season is just about to kick off, what do you guys have planned for the summer? Smudge: Our plan is to throw a few parties in the New York area and have people come over and enjoy the food and the music Montserrat style, we'll be posting dates and times on My Montserrat and Strats Finest. My Montserrat: Will you be back on Montserrat for festival this year? Jake: That is the plan, once the creator allows. My Montserrat: Is "Smudge and Jake" going to be an annual event on the Island? Smudge: Yea man. My Montserrat: What are your long term plans if any for Smudge & Jake. Jake: Our intention is to establish a great seafood restaurant on Montserrat.
